Chicken Noodle Soup

Today, I am coming at you with my homemade (kind of) chicken noodle soup! It was amazing - seriously. It was the perfect dish to make on this snow day and I want to share the recipe with you guys.

The dish itself is extremely customizable. You can add any vegetables that you prefer and you can always opt out of certain ingredients. But, here are the main ones...


What you'll need:

  • 1 packet of boneless chicken, cubed or you can use shredded chicken

  • 1/2 an onion, minced

  • 3 bottles of chicken broth

  • 5 garlic cloves, minced

  • 1 packet of frozen peas

  • 1 packet of carrots

  • 1/2 a bag of peeled golden potatoes, cubed

  • 1 bag of soup noodles

  • salt and pepper, to taste

First, you need to cook the onions and garlic with olive oil on medium to low heat in a large pot.


Once the onions are translucent, add the chicken, season with salt and pepper. Don't turn the heat on high or the garlic will burn. Let the chicken cook slow, stirring often.


After the chicken is fully done cooking, add the three bottles of chicken broth. Season the soup with salt and pepper. Let it simmer for 20 minutes, covered.


When 20 minutes are up, it is time to add the veggies and the potatoes. Pop everything in the pot, mix and cover for another 30 minutes.

The last step is to add the noodles. Let it simmer with the noodles for 10 minutes, uncovered.


If at any point in the cooking, you see the soup losing liquid and you are out of broth, all you have to do is add water. But, just remember adding water will take away from the flavor, so make sure to always add salt and pepper. Keep tasting the soup to see if it needs to be seasoned more.


& that's it! The soup is done and ready to serve. Doesn't it look amazing??
