The best Hearty Beef Stew

My mother and I made the best beef stew I think I've ever had in my life & I am going to share the recipe with you guys! You are welcome ;). This is a great dish to make when you are sick, on a rainy day or during a winter storm (which is currently happening in my state, ARGHHH! 2-4 inches are coming and I am not ready).

The first step to making this beef stew is to cook the meat on low heat. Did I just rhyme?? Go me! In a big pan on low heat, put two tablespoons of extra virgin olive oil. Finely mince one onion and three cloves of garlic and throw them in the pan. Let it sweat.


While the onion and garlic are cooking, dice the beef. I bought three packets of beef chunks. The chunks were too big so I cut them in half.


When the onions are transparent, you can put the meat in the pan. Season it with salt and pepper and cover it for 10 minutes.


In the meantime, you can prepare the crockpot. Wash and then cube four white potatoes and place them in the crockpot. Add one bag of frozen corn (and any other frozen vegetables that you might have).


After 10 minutes, put the beef into the crockpot. Sprinkle one ranch powder packet, one gravy powder packet, and one onion powder packet. These packets can be found at your local grocery store. Add in 1/2 a cup of chicken broth and one cup of egg noodles.


The crockpot needs to be on high. Let the stew cook for eight hours before serving. Mixing occasionally. You can pair the stew with rolls, rice or mashed potatoes.
